Ingredients

For the Fries:

  • 1 red bell pepper, diced

  • 1-2 tablespoons avocado oil

  • 1 can chipotle peppers in adobo sauce (for drizzle)

For the Guacamole:

  • 4 avocados

  • 3 jalapeños, diced

  • 1/2 red onion, diced

  • 2 garlic cloves, minced

  • 1/2 cup chopped cilantro

  • Juice of 1 lime

  • Salt and pepper to taste

For the Greek Yogurt Sauce:

  • 1 cup Greek yogurt

  • 1-2 tablespoons chipotle sauce from the adobo pepper can

  • 1 tablespoon Taco Tuesday Prep Seasoning

Instructions

Step 1: Prepare the Fries

  1. Cut the russet potatoes lengthwise into thin fries.

  2. Place the fries in a large bowl and drizzle with avocado oil. Sprinkle with salt and pepper and toss to coat.

  3. Arrange the fries in a single layer in your air fryer basket.

  4. Cook at 390°F for 20 minutes, shaking the basket halfway through for even cooking.

Step 2: Cook the Beef

  1. Heat avocado oil in a large skillet over medium heat.

  2. Add the ground beef and cook until it’s almost browned.

  3. Stir in the diced yellow onion and red bell pepper. Cook until the vegetables are soft.

  4. Drizzle chipotle sauce from the adobo pepper can over the beef mixture and stir to combine. Cook for an additional 2-3 minutes.

  1. In a small bowl, combine the Greek yogurt with 1-2 tablespoons of chipotle sauce from the adobo chili can.

  2. Add a sprinkle of Taco Tuesday Prep Seasoning and mix well.
